The Carter-Hoffmann MC series hot food modular holding cabinets are ideal for moisture-sensitive items, such as hamburgers, chicken, vegetables, etc.  Built-in covers for each pan seal in moisture and along with the bottom heat, create the ideal environment for the food in each pan.  Controls can be programmed for up to six items per pan, with individual pan timers. Single-sided or pass-through access.  Pass through holding cabinet models have pan timers on both sides.

• Electronic temperature controls with countdown timers and audio/visual alarm. Allows user to program temperature in one degree increments from up to 195oF (91oC). Timer can be set for up to 9 hours, 59 minutes, in 1 minute increments. Three timers per slot. Countdown will convert to seconds when less than one minute is left.
• INTEGRATED PAN COVERS… Built-in, removable aluminium pan lids, held in place with gravity. Easily removed, without tools, for cleaning or holding uncovered food products. Lids in place provide seals for pans containing moisture-sensitive food products. Covers for 1/3, 1/2 and full size pans, depending on model number.

They have top and bottom heat, with separate controls, individual pan timers, alpha-numeric displays and self contained food covers.  Programming for menu settings can be done manually or via USB port. Each pan can have up to 25 pre-programmed menu settings.  Models can have single-sided or pass-through access to pans.  Pass-through holding cabinet models have rear displays for temperature and time.
